Increasing the added value of meat from fighting cattle based on the environmental, economic and social sustainability of its production in rural environments,
Objectives
- Characterization of carcass and meat quality from two commercial types: culled heifers from animal testing and aged cows; as well as sensory acceptance using untrained consumer panels in six Spanish cities.
- Determining the main environmental impacts of bull farms. This information has been used in optimization models for the identification and implementation of the most sustainable and competitive livestock farming practices.
Results
