The main objective of this project was to develop dairy products made with organically produced mare's milk from the Community of Madrid. These products expand the range of dairy products adapted and available to meet new consumer profiles, demands, and/or preferences. They also extend the shelf life of mare's milk where lipid oxidation is a problem. They also propose the use of plant extracts rich in antioxidant compounds to prevent it. This is a highly innovative approach, as these types of extracts are rarely incorporated into dairy products.
Various formulations of natural yogurts with no added sugar and no lactose have been developed in drinkable format, as well as yogurts enriched with antioxidant compounds with no added sugar and no lactose, and various formulations of kefir with no added sugar and no lactose. These products are completely new to the market, as no dairy derivatives made from mare's milk are currently available. Yogurts and kefir are considered functional foods, low in fat and without added sugar, and can therefore be part of a healthy and balanced diet that helps prevent certain diseases and promote a healthy lifestyle.
Their lower fat and cholesterol content can be used to reduce cholesterol intake and control cardiovascular disease. They have high added value because they are certified organic, climate-responsive, preserve forests and forest resources, contribute to the establishment of a quality and economically sustainable rural population, and are local products of the CM. These aspects are increasingly in demand by new consumer profiles.
Promote efficient use of resources in the agricultural sector, geared toward organic production systems. Increase the range of dairy products (organic yogurt and mare's milk kefir) available to consumers. Improve processes aimed at environmental protection and climate change mitigation, since livestock farming favors better use of mountain areas. Unite scientific research and the needs of the agricultural and food sectors. Address the perishability of mare's milk by transforming it into products with a longer shelf life and using by-products from the wine industry as antioxidant compounds.
- Implementation of the formulation and production methods for products developed from mare's milk, yogurt and kefir, and enriched with antioxidants.
- Characterization of mare's milk: physical-chemical and microbiological characteristics.
- Evaluation of the physical-chemical and microbiological properties, lipid composition (fatty acid profile and volatile compounds).
- Sensory characterization of new products.
- Conducting a market study to reflect dairy product consumption in the Community of Madrid and the purchasing intentions for new products.
- Scientific presentation and dissemination events.
The overall objective of the project (OG1) is to develop organic dairy products from mare's milk.
The partial objectives are:
- Launch two new product lines based on organically produced mare's milk: yogurt and kefir (OP1).
- Demonstrate the feasibility of using grape by-products as dairy product additives (OP2).
- Influence innovative approaches as a way to secure the rural population, with special attention to women (OP3).
The objectives sought to be achieved through the implementation of this project are in line with the main objectives pursued by the European Partnership for Agricultural Productivity and Sustainability Innovation (AEI-AGRI).
