Cheese factories will have access to a series of tools designed by the industry that will efficiently meet their specific management, control, and documentation needs, improving the efficiency of their managers.
The aim is to design, create, use, facilitate, and promote a cloud-based IT tool, interconnected with various critical points in the product development process and with a virtual assistant that facilitates data collection, providing information on the different stages of the production process. This tool will contribute to enhancing the efficiency and sustainable management of artisanal production systems as a tool to ensure the resilience of these productive structures.

Visualization of the role of dairy farming in Andalusia and its derived products. Contribution to local development in rural areas with high ecological value, such as natural parks or protected areas, where livestock sustainably utilize forest resources.
We start from the basis of an Andalusian cheese sector characterized by small businesses distributed throughout Andalusia and located mainly in rural areas where it is important to highlight that in many cases the role of the cheesemaker ranges from being a livestock person and manager of a farm, carrying out the transformation of that milk to the commercialization of the final products, that is, they are agro-industrial models that integrate all phases of the production process.
Therefore, the sector has been seeking solutions and tools that allow it to improve its production efficiency, as well as to be able to communicate to the market the elements that make its products different and unique, both due to the production and processing environment and due to their intrinsic sensory and nutritional quality.
And from there, the idea for this project, ARISTEO, known as the "God of Cheese," was born. It aims to develop cloud-based tools that allow us to manage artisanal cheese production in Andalusia through elements of artificial intelligence, the Internet of Things, and data analysis.
The project includes an initial documentary phase, which will begin with a state-of-the-art review, followed by the design and planning of the technological diagnostic system. It will conclude with the design and implementation of sensors in the experimental cheese factories. In the experimental phase of the project, the main activity is the design, development, and implementation of a virtual assistant through different versions (initial and improved), with its final implementation in a pilot cheese factory.
Optimize the comprehensive management of Andalusian artisanal cheese factories by developing a series of technological tools based on the Internet of Things, artificial intelligence, and data analysis. This is intended to ensure improved environmental, social, and economic management of the Andalusian cheese sector, which will serve as a driving force for the consolidation and growth of this sector, which is of great importance to rural Andalusia.
