Description
This Operational Group seeks to produce quality wines that meet the demands of the market for healthy products, limiting the presence of chemical additives. This project proposes the extraction of phenolic compounds with antioxidant and antimicrobial properties as substitutes or complements for sulfur dioxide.
Objectives
- Replacement or limitation of the sulfur content of wine using phenolic compounds with antioxidant and antimicrobial activity from winemaking and spirits production waste.
- Optimize analytical techniques for the extraction, identification, and purification of phenolic compounds from waste products from the wine and spirits industries.
- Evaluate the impact of applying these extracts to wine at different stages, as a complement to or substitute for sulfur dioxide. Define application techniques for these extracts, such as encapsulation, to avoid altering the analytical and sensory characteristics of the wine being treated.
