Abstract
- Expected outcome 1: State-of-the-art study reporting on the potential of various alternative protein sources (microalgae, insects, and unicellular organisms), as well as improvements in the cultivation parameters of these sources to optimize their production and implement more efficient and sustainable extraction techniques. The protein-based food market will also be studied to identify opportunities for developing new prototypes that are accepted by consumers.
- Expected result 2: Characterization and selection of alternative protein sources based on the study of breeding and growth of insects, microorganisms and algae, carrying out a screening that allows the selection of species that can offer protein profiles with high added value.
- Expected outcome 3: Optimization of extraction parameters, purification, and stabilization of the protein fraction obtained from the different sources studied. Scaling up production and optimization of downstream processes.
- Expected outcome 4: Characterization and production of new food prototypes based on protein isolated from the different alternative sources studied. Positive impact: The project's development will lead to the production of more sustainable protein-based food products than those typically found on the market. The use of alternative protein sources to animal protein already offers a clear environmental sustainability advantage due to their high pollution potential. Furthermore, the use of circular economy techniques, combining protein sources with byproducts from other industries, helps produce economically sustainable product prototypes.

- Activity 1 - Characterization and selection of high added value raw materials from different production systems.
- Activity 2 - Extraction design, evaluation and stabilization of the protein fraction and other compounds of interest from the selected raw materials.
- Activity 3 - Obtaining and evaluating protein foods from the fractions obtained.

Objectives
The overall objective of the project focuses on research into new, sustainable alternative protein sources that will enable the development of novel protein-rich foods and, therefore, contribute to alleviating the environmental pressure caused primarily by conventional animal production systems. To achieve this objective, three raw materials (insects, microalgae, and other microorganisms) characterized by high protein content will be studied, as well as other compounds of interest (fatty acids, vitamins, antioxidants, etc.).
