Description

The Operational Group aims to develop strategies for utilizing whey for human consumption, developing new products without the need for large investments, eliminating environmental problems, and generating new sources of income.

Cheese whey can be your main ingredient, an ingredient with technological functions, etc.

Objectives
  • Develop whey utilization strategies for small cheese factories, using whey as the sole principal ingredient in new, economically affordable products for small cheese factories.
