CAZARUM Operational Group: Select game meats from Galicia

This Operational Group aims to resolve a pressing problem in the rural agricultural sector: the lack of traceability and marketability of big game, and in turn contribute to the development of the rural environment by creating new jobs that allow for greater rural activity and, therefore, the settlement of the population.

Its objective will be to implement a traceability system for Galician game meat throughout Galicia, allowing the origin of this big game meat to be known at all times. This will allow for the availability of a certified food product from Galician mountains that is novel, natural, organic, and healthy, based on its intrinsic characteristics. This will also allow for the initiation of the use, transformation, and valorization of these products in their various forms, including fresh, frozen, cured, seasoned, and pre-cooked products.
