Objectives
- Improving the value chain of beef equine by highlighting quality foal meat.
- Strategies to improve productivity and profitability of equine meat farms.
- To understand consumer perception regarding horse meat and identify strategies to improve its image.
- Improving knowledge of carcass conformation, meat characteristics and the development of innovative derivatives and products based on horse meat.
Results
- Determination of the population growth curve in foals of the marismeña breed and the Asturian mountain horse.
- Study of the economic situation of equine breeding farms for meat production in the Marsala and Asturias regions.
- Study of consumer perceptions regarding horse meat and identification of strategies to improve its image and consumption.
- Characterization of foal carcasses and cutting: carcass classification, cutting development and preparation of sample sheets, Development of innovative meat derivatives based on foal meat and characterization of culinary treatments for their enhancement, Microbiological, nutritional and sensory evaluation of foal meat and meat derivatives, Developed culinary processes.
