With the support of the Biodiversity Foundation, the Observatory for a Territorial Culture has launched a pilot project on the University Campus. The goal is to incorporate local, seasonal foods produced in municipalities within the Natura 2000 Network into university cafeteria menus and catering services, raising awareness of the positive impacts of these products and creating a network among producers.
The project has helped promote the consumption of local, seasonal, organic, and agroecological foods produced in Natura 2000 Network municipalities in the Madrid bioregion. The cafeteria of the School of Agricultural, Food, and Biosystems Engineering has become a real space for research, innovation, and development. This experience has generated valuable data to provide the university administration with tools to initiate the transition toward sustainability in its cafeterias.
