Description
Regarding food formulas that functionally replicate egg products, this project has focused on their adjustment and scaling up to facilitate their transfer to the industrial sector. This approach responds to the needs of consumers who require or prefer egg-free options, while maintaining nutritional value and technological functionality in their applications. It also addresses an industry need for alternatives with favorable technological characteristics.
Results
Development of two allergen-free egg product analogues as food ingredients. Successful complete replacement of eggs in two food formulations: one for ready-to-eat food products and the other for breakfast foods. Scaling and industrialization of the solution in a relevant industrial environment: TRL 9.
