Description
Development of a predictive tool for the aging potential of wines, which is useful in the context of accelerating the natural aging conditions of wines and the photochemical processes caused by light.
Contextual description
The lack of predictive models that anticipate how an aged wine will evolve makes its production a challenge for wineries.
Results
-48°C and 150 hours of irradiation accelerate the evolution of key barrel aging parameters in Secadero, Reserva, and Montijo red wines. -The tool has proven useful for certain wine types, but cannot be standardized for highly complex matrices in general.
