Description of activities

Management and coordination of collaborative project tasks. Definition and formulation of the new product production process. Definition of the cider production process under different production conditions. Development of commercial-scale cider prototypes (pilot project). Monitoring and quality control of the pilot process (pilot project). Tasting sessions and product presentations to industry stakeholders (promotional development). Project dissemination and communication.

Objectives

The overall objective of the project is to acquire knowledge of the processes that lead to obtaining one or more beverages other than natural cider, which incorporate apple must and honey into the fermentation process and result in a new, innovative alternative alcoholic beverage, with sensory quality and respecting the values of natural cider itself, highlighting the honey produced in apple orchards through a local product.
