Description of activities
- A1. Revaluation of the leaf to obtain bioactive compounds through fermentative biotechnological processes.
- A2. Revaluation of the leaf to obtain bioactive compounds through green technologies and evaluation of the combined sequential effect of extractive and fermentative processes.

Objectives
To comprehensively revalue olive leaves as a source of phytochemicals and nutrients with recognized bioactive properties within a circular and sustainable economy characterized by a functional triad: a) terpenes and phenolic metabolites (hydroxytyrosol, tyrosol, oleuropein aglycone, oleacein, and oleocanthal); b) proteins; and c) fiber.
Results
The expected results of this project are the comprehensive revaluation of one of the main olive byproducts for direct application in the formulation of functional oils enriched with high-value-added compounds and the development of food ingredients with functional properties and value-added technological characteristics that have the potential to be used by the food industry in food formulations.
