Abstract

This project will obtain Iberian pork by-products with potential for use. In addition, the main technologies and their use for the products obtained will be available. With all this, the viability of the technologies will be obtained, the profitability of the use of these by-products for marketing and their environmental sustainability will be seen. Finally, protocols will be in place so that producers can carry out a standardized process and a logistics proposal for collection, processing and transport to the sales area.

These products will provide added value to Iberian ham producing companies, as these by-products are not currently being used, and in addition, possible co-products will be identified, which will also increase the companies' income. These by-products contain proteins and other nutrients, which makes them suitable for recycling and transforming into high-value products.

Determination and selection of Iberian pork by-products and co-products with potential use for different purposes.

Analysis of the main existing technologies and their application for each by-product and purpose.

Technical, economic and environmental feasibility study.

Preparation of final protocols for the use of each by-product and co-product. Logistical proposal for the application of the final protocols.

Objectives

Identify Iberian pork by-products, assess their potential in various applications and develop technologies and protocols for their optimal and sustainable use according to their final destination.
