Description

The geographical dispersion of artisan cheese factories and their low sales volumes, compared to the large processors in the dairy sector, makes it unviable for small cheese factories to collect whey for processing due to the high logistics costs.

Objectives

The main objective of the project is to develop strategies for using whey for human consumption, producing new products without the need for large investments, eliminating the environmental problem and generating new sources of income.
