Contextual description
Zitromac generates 20 tons of organic waste annually from the production of natural citrus juices, which is currently discarded. The ZITRUSNOVA project aims to add value to these byproducts using cutting, drying, grinding, and sieving technologies to obtain functional ingredients in powder or dice form. These products, rich in fiber, antioxidants, and vitamins, are targeted at sectors such as cocktails and confectionery, contributing to the company's sustainability and diversification of its product range.
Results
Optimization of drying and milling processes to preserve organoleptic properties and improve solubility. Development of a citrus powder from natural juice waste, with potential in cocktails and confectionery. Physicochemical and sensory validation of the developed products.
