Description
The project aims to valorize broccoli byproducts through enzymatic treatments to obtain ingredients rich in soluble dietary fiber and bioactive compounds. These ingredients will be incorporated into functional bakery products with improved nutritional profiles, and their acceptability, digestibility, and prebiotic activity will be evaluated.
Results
Optimization of an extraction procedure for a fiber-rich ingredient from broccoli stalks. Characterization of the ingredient: fiber composition, technofunctional and antioxidant properties. Incorporation of the ingredient into the formulation of breads with high dietary fiber content, increased antioxidant capacity, and good organoleptic acceptability.
