Abstract
The project envisions the development and validation of an innovative high-pressure water jet cutting machine, capable of making automatic, precise and safe cuts on different pieces of lamb, including those with bone, adapting to their complex morphology.
Description

The project envisions the development and validation of an innovative high-pressure water jet cutting machine capable of performing automatic, precise, and safe cuts on various cuts of lamb, including those with bone, adapting to their complex morphology. Expected results show that the new technology will significantly reduce meat loss, from approximately 4% to around 1%, improving carcass utilization and increasing the profitability of the butchering process. A substantial improvement in the uniformity, presentation, and visual quality of the cuts is also anticipated, facilitating their marketing in higher value-added formats. The system will reduce occupational hazards and cross-contamination by eliminating contact with blades, thus increasing food safety. Overall, the findings will demonstrate the system's technical and industrial viability, its positive economic impact, and its contribution to the modernization and competitiveness of the sheep sector.

Description of activities

The project is structured around a set of activities aimed at the design, development, validation and implementation of a new high-pressure water jet cutting technology applied to lamb butchering.

  • In the first phase, technical and functional studies are carried out to define the system requirements, analyze the morphology of the meat pieces and establish the optimal cutting parameters.
  • Subsequently, the design and construction of the machine prototype is addressed, integrating the high-pressure water generation system, the positioning mechanisms, and the automation and control elements.
  • Next, experimental tests are carried out under real working conditions to evaluate cutting accuracy, waste reduction, final product quality, and process safety.
  • At the same time, the economic, productive and labor impacts of the new system are analyzed in comparison to traditional techniques.
  • Finally, industrial validation activities, prototype optimization and dissemination of results are carried out, with the aim of facilitating technology transfer and its future implementation in the meat industry.
Objectives

The main objective of this project is the design and development of a machine for the automatic and precise cutting of different pieces of lamb in the cutting rooms of slaughterhouses.

Scientific and technological objectives:

  • The system has to provide a solution for the different shapes of lamb pieces using 3D computer vision or sensor technology.
  • Development of a cutting machine that is precise, safe and without waste, using a water jet to increase the value of the different parts of the lamb.
