Description
This project, focusing on a portfolio of strains with functional and/or technological activity, has sought to define a valorization strategy that includes market analysis, costs, and sectoral margins. Furthermore, it has considered the production of a pilot batch for validation in nutritional intervention. This comprehensive approach maximizes the value of the technology transfer.
Results
A market study was conducted to generate knowledge about the potential transfer of probiotic and technological strains, analyzing the entire value chain. The cultivation process for the bacterium Lactobacillus sakei CNTA 173 was successfully scaled up to 100 liters. TRL achieved: 8. One batch was encapsulated for study in a human nutritional intervention study.
