Abstract

The project aims to certify and differentiate Ternasco de Aragón PGI offal, making it the first offal in Spain to be awarded a seal of quality. Expected results include the implementation of classification, traceability, and certification protocols, the optimization of conservation and packaging, and the validation of microbiological and nutritional properties.

Market tests confirm high demand in the gourmet sector, which increases profitability. The initiative strengthens the sheep sector, adding value and sustainability, and positioning these offal as premium products in domestic markets.

Description

Technical development and market testing of at least six references of Ternasco de Aragón PGI lamb offal, primarily the so-called red viscera (liver, kidneys, etc.) and those from the head. Increase the profitability of the Ternasco de Aragón lamb offal sold. We estimate that we can achieve a differential profitability of +0.50 euros/kilo on average for a total sales volume of 230,000 kilos: a total of +115,000 euros/year. In four years, we would achieve at least +460,000 euros in profitability. Increase the overall profitability of lamb offal in Spain. The momentum of this project could allow for a revaluation of the entire category in our country.

Description of activities
  • Implement a classification protocol to differentiate “Ternasco de Aragón PGI offal” from generic lamb offal.
  • Establish an appropriate traceability and digitalization system. Define the control and certification protocol for slaughterhouses and processing plants.
  • Optimize preservation and packaging according to the sales channel, considering refrigeration, freezing, and different types of packaging.
  • To analyze the microbiology and shelf life of Ternasco de Aragón PGI offal and generic lamb comparatively.
  • Evaluate the nutritional composition of both products.
  • To study customer and consumer perceptions of Ternasco de Aragón PGI lamb offal versus generic lamb offal, considering both technical aspects and brand value and the PGI seal.
  • Define a dissemination argument based on the data obtained.
  • Evaluate the feasibility of disassembling and selling separately parts that are currently indivisible, such as the head (brains, tongue, cheeks), given their demand in fine dining.
  • Design and execute a communications and marketing plan for the innovative Ternasco de Aragón PGI offal, based on the results of the analyses performed.
Objectives

The partners, experts in lamb and Ternasco de Aragón PGI, have been innovating in their marketing for over 40 years. However, the offal has been poorly differentiated and lacking quality certification. Upcoming changes will allow its sale with the PGI seal, ensuring traceability and origin. This opens up a significant opportunity in the gourmet market, aligned with sustainability and food safety trends, but requires addressing technical challenges through sector collaboration and innovation.
