Description

This Operational Group was created to develop a sustainable and natural alternative, guaranteeing the shelf life and organoleptic quality of fresh-cut vegetables and fruits, through innovative alternative methods to current ones (hypochlorite), and using active edible coatings with biopolymers with the possible addition of compounds with antioxidant and/or antimicrobial effects.

Objectives
  • Evaluate different innovative alternative methods to those currently used for sanitizing IV gamma plant products, ensuring safety.
  • To study the use of active edible coatings composed of biopolymers with the possible addition of compounds with antioxidant and/or antimicrobial effects.
Results
  • Obtaining more natural and healthier IV range plant products that offer an alternative to the use of chlorine as a disinfectant.
  • Ensure the food safety of fresh-cut plant products by increasing their shelf life.
