Description

GO ORLEAnS proposes to valorise a waste product, whey from the production of goat cheese, to develop bioactive packaging, by formulating a bioactive coating made from fermented whey.

Objectives
  • Obtaining bioactive additives through the fermentation of goat and sheep milk whey by antimicrobial strains that have the capacity to combat Penicillium spp. and yeasts.
  • Development of active packaging for cheese.
  • Ensure the food quality of cheese by using non-synthetic preservatives.
  • Achieve good consumer acceptance of new products: active packaging and healthier cheeses.
  • To demonstrate the validity of fermented whey as probiotics for animal feed.
Results
  • Identification of 58 lactic acid bacteria from milk, whey and cheese samples, of which 7 have antifungal potential against the main cheese pathogens.
  • Conducting effectiveness studies against pathogens to determine the in vitro antifungal activity of the active coating, as well as the active packaging prototype and packaging-food interaction studies (shelf life) to determine the in vivo antifungal activity of the active coating and the active packaging prototype.
  • Obtaining a safe preservative bioingredient for use against cheese pathogens, increasing the shelf life of the cheese without altering the physical, chemical and organoleptic quality parameters.
  • Proven acceptability of new, more natural products by cheese consumers.
  • Positive evaluation of the capacity of fermented whey for potential probiotic applications in animal feed.
