Description
The overall objective of the INSEKNIOR project is to study alternative and sustainable sources of protein for the elderly target group using insects (Tenebrio molitor species) to develop a new range of products that take into account their nutritional needs.
Description of activities
1 Development of meat analogues based on insect meal or insects with plant-based ingredients
2 incorporation of fiber into existing dishes on the Ausolan menu
3 analyses, both nutritional and microbiological
4 Texture analysis
Objectives
Development of adapted products aimed at the senior population through the application of a new source of protein from insects (Tenebrio molitor species).
