Description

Galicia boasts a diverse range of grape varieties and wine yeasts, which are a useful tool for addressing the consequences of climate change in viticulture. Long-cycle, high-acidity varieties that can address this issue include Loureira (white) and Caíño Longo, Caíño Tinto, or Sousón (red). In other short-cycle varieties with high acidity, such as Albariño or Caíño Branco, increasing temperatures will favor a decrease in acidity and allow for more balanced wines.
