ALG-ALIM is investigating how to use the carob tree and its fruit in a comprehensive way.
Contextual description
To enhance the value of carob cultivation through a multidisciplinary strategy that overcomes scientific and market barriers that limit its use in human food, in order to make it a sustainable, healthy and profitable alternative in the agri-food sector.
Results
Carob has been shown to be valuable as a sustainable alternative to cocoa, developing flours, syrups and baked goods that improve the nutritional profile, regulate the glycemic index and provide antioxidants, with a crop that is drought-resistant and has low water consumption.
