The PANACEA research generates new nutraceuticals through upcycling.
Contextual description
The PANACEA project faces two major challenges: understanding the relationship between the structure of fungal β-glucans and their biological properties, and ensuring their sustainable production. To achieve this, it combines basic and applied research, optimizing both mycelium production and extraction from Pleurotus waste using environmentally friendly methodologies. This approach not only contributes to the circular economy and the development of new nutraceuticals, but also offers a model that can be transferred to other agro-industrial waste products.
Results
Pleurotus mushroom waste has been transformed into nutraceutical ingredients with anti-inflammatory, antioxidant and immunostimulatory properties, offering a healthy and sustainable source of bioactive compounds such as beta-glucans and taking advantage of a waste product that would otherwise be wasted.
