Description
Development of a vegan edible fork from non-allergenic or non-intolerant ingredients such as gluten, nuts, etc. and with a neutral flavor, which can be used for consuming prepared dishes and salads.
Contextual description
Increasing restrictions are being placed on single-use plastics, such as those used in ready-to-eat forks. The challenge lies in developing an edible alternative that combines sustainability, food safety, and a pleasant sensory experience.
Results
- Gluten-free and allergen-free formulation with a hard, crunchy texture and neutral flavor. - Piercing ability comparable to reference edible forks. - Good sensory acceptance in consumer panels, with scores above the acceptability threshold.
