Description
Starting with a solution developed from surplus vegetables from the agri-food industry, this project has made progress in the industrial scaling of a ready-to-eat tagliatelle-type food. This initiative transforms waste into resources, bringing the product closer to the consumer and contributing to circularity in the food sector.
Results
New formula with no traces of allergens. Organoleptic properties adapted to consumer taste: the new formula provides a lighter color to the pasta, a more balanced flavor, and greater elasticity. Industrial scale-up of the production process: manufacturing trial carried out in a relevant industrial environment and at a commercial batch size. TRL9.
