Description
Development of a fruit pulp-based mousse, allergen-free and vegan, with a texture similar to chocolate mousse, attractive color and long palatability, formulated and processed for industrial viability at room temperature.
Results
- Formulated with 80% strawberry pulp, vegan, allergen-free, with a chocolate mousse-like texture. - High consumer acceptance validated through a study. - Process designed for industrial scaling, with tested equipment and functionalities.
