CANGAS WINEPRINT Operational Group: Project for the characterization and innovation of wines with the Protected Designation of Origin Cangas

The CANGASWINEPRINT Innovation Project aims to carry out, taking advantage of current technological advances for the characterization of the different varieties of wine produced by the Cangas PDO, through the data obtained both in previous harvests and in the current one, a physical-chemical characterization of oak wood (native) and selection of staves in relation to the parameters of oenological interest and appropriate to the variety of wine to be produced, as well as obtaining the fingerprint of the wine, certifying its origin and traceability.
