Objectives
The main objective to be defined by the Operative Group is to establish the strategies that the processed meat sector can carry out to manufacture products adapted to nutritional recommendations that ensure the health of consumers, acting on 3 basic ingredients: nitrifying salts, sodium and fats, eliminating them, replacing them and/or reducing them without altering the original sensory properties.
