Operational Group: Recovery of the red chestnut variety and production of a distinctive wine

The objectives of this Operational Group are the following:

• Characterization of agronomic performance and behavior under field conditions.
• Yield and quality analysis of Vitis vinifera and chestnut trees under a sustainable production system.
• Qualitative characterization: phenolic and aromatic compounds under field conditions; preparation of single-varietal wine for sale as a unique product with high added value, derived from the variety's unique characteristics/scarcity/potential.
• Prospective surface available with suitable characteristics for the implementation of chestnut ink.
• Economic valuation/cost-benefit analysis.
