Development of innovative production, marketing and transformation strategies for the reintroduction of recovered local varieties into the agricultural market

The Operative Group is developing the project: Processed Vegetables from Recovered Varieties. The aim is to analyse the suitability of reintroducing traditional vegetable varieties into consumer markets through their transformation as value-added products. Therefore, the suitability of the different vegetables and the possible transformation methods are assessed.

The project focuses on technological, organisational and commercial innovation. The main objectives are to improve the profitability of farms, enhance the competitiveness of vegetables and preserve biodiversity.
