The Operational Group develops the project:

Processing of Recovered Varieties. This aims to analyze the suitability of reintroducing traditional vegetable varieties into consumer markets through their processing as value-added products. Therefore, the suitability of different vegetables and possible processing methods are assessed.

The project focuses on technological, organizational, and commercial innovation.

The main objectives are to improve farm profitability, enhance the competitiveness of vegetables, and preserve biodiversity.
