Description
In recent years, the quality of the skin of Spanish entrefino lambs has experienced a sharp decline, causing difficulties in marketing them in high-value markets. Improving this quality should increase their value.
Objectives
- Detailed information on all aspects of lamb production on farms, slaughterhouse management, and skin preservation until processing.
- Analysis of a representative number of skins to determine the presence of defects and their significance.
- Establishment of effective preventive measures at all levels studied to reduce the presence and intensity of skin lesions.
- Creation and dissemination of the good practices guide among sheep producers.
