GO UBAVIDA sparks scientific curiosity at the European Researchers' Night in Madrid

The UBAVIDA working group participated in the 16th European Researchers' Night in Madrid , a leading event that brings together more than 460 European cities to celebrate science and innovation . The event took place at the Telefónica Foundation Space in Madrid, where researchers from CIAL (CSIC-UAM) joined other centers from the Cantoblanco campus in a large science fair, specialized workshops, and a talent show that was very well received by the public.

The Microbiome, Food and Health group at CIAL addressed key issues concerning the future of wine and its relationship to climate change , explaining how rising temperatures and sugar accumulation in grapevines directly influence alcohol content . They highlighted UBAVIDA's role in developing innovative and sustainable agricultural practices aimed at obtaining grapes with lower sugar concentrations and producing wines with less alcohol, without compromising sensory quality .

During the event, researchers showcased some of their work on characterizing bioactive compounds and studying their behavior in the human microbiota using the Dynamic Gastrointestinal Simulator (SIMGI) , a pioneering infrastructure that allows for the reproduction of the digestive tract's function . In addition, attendees were able to sample alcohol-free wines produced by Bodega Win Sin Alcohol , highlighting the progress of a project that combines research, sustainability, and health.
