Description
The project evaluates encapsulated essential oils as an environmentally friendly alternative to chemical disinfectants for cut lettuce. It studies their antimicrobial effect, the impact of ultra-clean processing conditions, and validates the technology to improve food safety and shelf life.
Results
Disinfection with aqueous solution of encapsulated bioactive compound extract at 0.6% reduced the total mesophilic bacteria of cut lettuce by approximately 3 log CFU/g after 5 days (4 ºC).
