AGROALNEXT Project: Development of ultrasonic systems for non-invasive monitoring of food quality and safety, aimed at improving the digitalization of the agri-food sector

The industrial-scale implementation of the technology under study would allow for the measurement of parameters that are currently impossible to measure with any other technology in the agri-food industry, in real time and across the entire production process. These parameters include composition, texture, and the presence of defects and foreign bodies (small fragments of plastic, glass, bones, or muscle cysts, etc.), which would contribute to the development of safer and healthier foods. The proper integration of information from the developed ultrasonic systems, along with the use of multivariate analysis techniques, big data, and the development of modeling and prediction systems, would facilitate rapid and intelligent decision-making regarding the product (classification, reprocessing, or rejection) and/or process (adjustment of variables or reformulation of processes), enabling the continuous improvement of the agri-food industry in the Valencian Community. This represents a decisive step in the challenge of its digital transformation.
