The project involves the design and validation of an X-ray system capable of detecting bones, impurities, and internal anomalies in lamb cuts, generating cutting paths adapted to their actual morphology. As described in the objectives and expected benefits, a technical tray compatible with radiographic inspection and subsequent cutting will also be developed, preventing interference and ensuring stability. The results will allow for reduced waste, improved cutting accuracy, increased food safety, and the marketing of cuts in higher value-added formats.
The project is structured into six main activities over 37 months.
- First, an analysis of the state of the art and the market will be carried out to define the technical specifications of the new X-ray system oriented to the calculation of cutting paths.
- Subsequently, a holding tray compatible with both radiographic capture and waterjet cutting will be designed and developed, avoiding interference and ensuring stability.
- The complete design of the X-ray system will then be addressed, followed by its development and prototyping in collaboration with a technology company and a university. The system will undergo multiple tests with different cuts of lamb in a real-world slaughterhouse environment, allowing for optimization of bone and impurity detection and adjustment of cutting paths.
- Finally, dissemination and transfer actions will be carried out to facilitate the adoption of the technology in the sheep sector.
The sheep sector suffers from low levels of technology in butchering, with imprecise manual cuts, losses, and difficulty in marketing tray-packed cuts. This project addresses this problem using an X-ray system that detects bones and internal impurities and generates customized cutting paths, improving precision, yield, food safety, and market value.
