Description
Using a selection of strains with preservative potential, the project has sought to validate their effectiveness in reducing or eliminating food additives. The project has focused on generating functional evidence that allows their use as protective cultures, thus offering a natural alternative that responds to the growing demand for "cleaner" and healthier products. This technological maturation allows the active ingredient to be adapted to the real needs of the market, facilitating its adoption and promoting the incorporation of biotechnological solutions with high transformative potential.
Results
Selection of the Pedidococcus acidilactici CNTA 214 strain for its antifungal activity against the most common molds in the meat industry (Penicillium spp and Aspergillus spp). Definition of the ingredient format for effective application in food.
