Description
To develop a sustainable and efficient biotechnological process to produce hyaluronic acid using whey as a fermentation substrate, transforming a polluting waste product of the cheese industry into a valuable resource for the cosmetic and pharmaceutical sectors, promoting the circular economy.
Contextual description
Hyaluronic acid (HA) is a high-value ingredient in the cosmetic and pharmaceutical industries, but its traditional production can be costly and unsustainable. This project aims to demonstrate the feasibility of a more efficient and environmentally friendly fermentation process, using whey as a substrate, an abundant byproduct of the dairy industry.
Results
A new process for obtaining hyaluronic acid through fermentation, using whey as a substrate. Identification of several CNTA strains with limited hyaluronic acid production, candidates for future genetic improvement to increase their productive capacity. Optimization of the fermentation process: Nearly doubling of hyaluronic acid production.
