Description of activities
  • Collection of olive oil samples from different commercial categories, design of a work protocol for data collection, analysis of the selected olive oils' sensory content, polyphenol content to highlight their antioxidant capacity, determination of the fatty acid profile and sterol profile, as indicators of the oil's authenticity.
  • Development of NIRS predictive models for predicting polyphenol content, fatty acid profile, and sterol profile in olive oils.
  • Using advanced modeling tools for large databases, based on AI.
  • Design and evaluation of a digital platform prototype that integrates the digital signal from NIRS sensors into olive oil analysis.
Objectives
  • Design and development of a strategy based on NIRS sensors and AI for analytical digitalization in the olive oil industry.
  • Optimization and instrumental comparison of the adaptation of different in-situ NIRS sensors (portable and in-line) for the comprehensive authentication and characterization of olive oil.
  • Creation of a spectral database with reference information on mandatory and voluntary parameters, including nutritional quality and antioxidant activity, for confirming the authenticity and integrity of olive oils, including GPS coordinates for locating the sample origin.
  • Development and validation of NIRS prediction models for the authentication of extra virgin olive oil and its characterization based on mandatory and voluntary physical-chemical parameters, and its sensory profile.
  • Evaluation of nonlinear algorithms and Artificial Intelligence (AI) strategies in large populations to optimize the predictive results of the models.
  • Design and evaluation of a digital platform prototype that integrates digital signals and predictive models generated by NIRS sensors for the instantaneous analysis of olive oil, enabling the company to respond to the self-monitoring needs of the olive oil industry, official inspection demands, and global consumer demands.
  • Design and implement a plan to disseminate the project's actions and results, enabling the dissemination and widespread adoption of the "culture of analytical digitalization in the olive oil industry" using NIRS sensors.
Results

The overall outcome of the proposed project is the development and fine-tuning of a comprehensive analytical digitalization strategy for the olive oil sector, based on cutting-edge, highly portable NIRS sensors suitable for on-site use, enabling instant, non-destructive product authentication, fraud detection, and comprehensive characterization of the oils using both mandatory and voluntary declaration parameters of significant value for product enhancement, such as their fatty acid and sterol profiles and their estimated antioxidant power based on their polyphenol content.
