National cooperage companies or sawmills will be able to achieve technological leadership in the sector by being able to offer barrels with a controlled oxygenation rate (OTR) and on demand, personalized. Each winemaker will be able to choose, for each type of wine/distillate, the oxygenation rate of the barrel, an aspect that will define the final characteristics of the wine or distillate.
The application of non-destructive technologies for the measurement of physical properties that define the Oxygen Transfer Rate (OTR) of wood will have an impact on the business sector and its socio-economic environment because it will generate new business opportunities for the national cooperage sector through the creation of a new "way of doing things", more technical and with the application of digitalization and artificial intelligence technologies for process control, generating a new innovative product in cooperage that will be accessible to the wine sector.
- Analysis of oxygen transfer rate in staves of different oak species (domestic and American) and study of the relationship with their granulometry.
- Anatomical analysis (granulometry) from high-definition RGB images.
- Analysis of oxygen transfer rate in each stave and study of its relationship with particle size distribution.
- Development and validation of a classification algorithm for flukes according to their Oxygen Transfer Rate (OTR).
- Design and development of the hardware for the industrial pre-stave classification prototype based on its OTR.
- Development of a pre-stave classification software based on its OTR using validated algorithms.
- Production of high, medium and low OTR American oak barrels.
- Production of wines from Tempranillo, Garnacha and Verdejo varietals and aging in high, medium and low OTR barrels.
- Conduct a profitability study of the stave classification prototype and the barrels with known or defined OTR.
- Develop a marketing and commercialization plan for the innovations.
Regarding the global oak barrel market, according to different reports, it is estimated that it will reach €1,050 million in 2026 with an annual growth of 5.3% from €770 million in 2020(21).
The main market is Europe, followed by the USA, and the market leader is Tonnellerie Francois Freres (TTF) with a market share of around 24%. The main market players are: TFF, Oeneo, Nadalie, World Cooperage, Bouchared Cooperages, G&P Garbellotto SpA, Canton Cooperage, The Barrel Mill and Kelvin Cooperage.
The development of this project will allow Spanish cooperages to access cutting-edge technology with the application of AI to improve their production process, offering barrels with greater homogeneity, as well as the possibility of expanding the product portfolio from American oak barrels to barrels with known oxygenation potential, which will represent an important differentiation in the cooperage market.
The positioning of Spanish cooperage groups in a groundbreaking technology may be the decisive step towards a qualitative leap with respect to French and American groups in particular. This innovation will be transferred to the wineries, which in turn will be transferred to consumers, who will be able to access wines with specific profiles. In the field of spirits, the impact of the development of the project will be very important due to the importance of wood in most of the products produced. The sector will have the opportunity to develop new products with new profiles to offer minority and exclusive products.
To increase the competitiveness of the wine and forestry industry by developing technological solutions that allow for the optimisation of barrel manufacturing with homogeneous characteristics and a known oxygenation rate.
