Design of an artisanal sheep-goat slaughterhouse

This Operational Group was created with the intention of designing a centre for the artisanal slaughter of sheep and goats linked to a livestock farm with proposals for the reuse of its waste, which would improve the quality of the meat obtained, facilitate marketing and improve profitability compared to the industrial slaughterhouse process.

The aim of this slaughterhouse is to improve the marketing and profitability of sheep and goat farms in high mountain areas, creating a model for adapting and taking advantage of the possibilities for improving the differentiated quality of meat. It also aims to identify legal and juridical formulas that support the activity and propose a zero-waste management system.
