Operational Group: Design of an artisanal sheep and goat slaughterhouse

This Task Force was created with the intention of designing an artisanal sheep and goat slaughterhouse linked to a livestock farm, with proposals for the reuse of its waste, improving the quality of the meat obtained, facilitating marketing, and increasing profitability compared to the industrial slaughterhouse process.

This slaughterhouse aims to improve the marketing and profitability of sheep and goat farms in high mountain areas, creating a model for adaptation and leveraging the potential for improving the differentiated quality of meat.

Likewise, the aim is to identify legal and regulatory formulas that support the activity and to propose a zero-waste management system.
