Description

Spain is the third largest exporter of vinegar worldwide, and sherry vinegar in particular is the main benchmark for the quality of this type of product in Spain.

It is currently difficult to control the origin and good practices of sherry vinegar in a viable manner, which creates a significant fraud problem that directly affects the wineries in the area, almost fifty companies and agricultural cooperatives.

Objectives

The objective of the Operational Group is to improve the competitiveness of farmers, industrialists and other agents related to Jerez Vinegar by developing a protocol that allows for the identification and definition of guidelines and/or analytical controls that allow control and verification bodies to authenticate DO Jerez vinegar in a viable and sustainable manner.

The aim is to prevent fraud in the production and sale of sherry vinegar, thereby benefiting operators in the sector.

The project also aims to influence the current specifications governing Jerez Vinegar and provide guidance for current technical and health regulations.
