Description

Spain is the third largest exporter of vinegar worldwide, and Jerez vinegar in particular is the main benchmark for quality of this type of product in Spain.

Currently, it is difficult to feasibly control the origin and best practices of Sherry vinegar, which creates a significant fraud problem that directly affects the region's wineries, including nearly fifty agricultural companies and cooperatives. This is intended to prevent fraud in the production and sale of Sherry vinegar, thereby benefiting industry operators.

The project also aims to impact the current specifications governing Sherry Vinegar and provide guidance for current technical and health regulations.

Objectives
  • Improve the competitiveness of farmers, industrialists, and other stakeholders involved in Sherry Vinegar.
  • Development of a protocol to identify and define the analytical guidelines and/or controls that will enable control and verification bodies to authenticate DO Jerez vinegar in a viable and sustainable manner.
