Many international, national, and regional research projects have been funded to generate useful knowledge about organic viticulture. Their results should be made known and put into practice among winegrowers and producers in the Jerez region. This will contribute to developing a more environmentally friendly wine industry, diversifying production with new oenological products, and contributing to the development of small businesses and job creation.
The Operational Group aims to develop organic viticulture within this framework, to disseminate and implement among winegrowers new vineyard management techniques that have an effect on improving soil quality, reducing the risk of erosion, transferring agrochemicals to water, capturing atmospheric CO2 and subsequently storing it in organic form in the soil, and limiting the excessive use of agricultural inputs, in addition to increasing biodiversity and the proliferation of natural enemies that facilitate the management and control of pests and diseases.
As well as promoting the use of native grape varieties and the recovery of ancient winemaking practices that can give personality to the wines produced in this area, contributing to the diversification of winemaking products and the creation and development of new small businesses and job creation.
