Description
GOVALMAVIN aims to develop and enhance new distinctive Spanish wines through alternative production and aging methods, utilizing traditional clay jars and newly designed technologies.
Objectives
- Optimizing the physical and mechanical properties of vats for winemaking and aging
- To produce and produce high-quality wines fermented and/or aged in vats using the main Spanish grape varieties: Tempranillo, Garnacha, Monastrell, and Macabeo (Viura).
- To enhance the value of Spanish wines produced and/or aged in clay jars among national and international consumers.
Results
- Characterization of the physical properties of the jars and optimization of the design and construction process of new jars for winemaking and aging.
- Development of winemaking itineraries based on the physical properties of the vats and the grape varieties to be vinified/preserved
- Strengthening the domestic and international market segment for wines aged in vats as a differentiating factor compared to wines preserved in wood. Obtaining high-quality wines aged without the addition of exogenous aromas.
