VALMAVIN Operational Group: Valorization of traditional materials for the production of quality wines

GOVALMAVIN aims to develop and enhance new distinctive Spanish wines through alternative production and aging methods, utilizing traditional clay jars and newly designed technologies.

Objectives
  • Optimizing the physical and mechanical properties of vats for winemaking and aging
  • To produce and produce high-quality wines fermented and/or aged in vats using the main Spanish grape varieties: Tempranillo, Garnacha, Monastrell, and Macabeo (Viura).
  • To enhance the value of Spanish wines produced and/or aged in clay jars among national and international consumers.
Results
  • Characterization of the physical properties of the jars and optimization of the design and construction process of new jars for winemaking and aging.
  • Development of winemaking itineraries based on the physical properties of the vats and the grape varieties to be vinified/preserved
  • Strengthening the domestic and international market segment for wines aged in vats as a differentiating factor compared to wines preserved in wood. Obtaining high-quality wines aged without the addition of exogenous aromas.
