Presentation of the results of the “ARISTEO. Andalusian cheeses 4.0” Operational Group

The University of Córdoba was the chosen venue for the closing day of the ARISTEO Operational Group , an initiative that has promoted the modernisation of the Andalusian cheese sector through the incorporation of innovative technologies. This project, under the motto "Andalusian Cheeses 4.0", has worked on the digitalisation and optimisation of the management of traditional cheese factories through the Internet of Things, artificial intelligence and data analysis .
The consortium that has made this progress possible is made up of the Andalusian Cheesemakers Association QUESANDALUZ, the University of Córdoba, the technology company Naoset Sistemas and the Rural Development Group Valle del Guadalhorce. Its main objective has been the implementation of industry 4.0 models to facilitate business management, automate data collection and improve both the production process and the consumer experience. Among its main achievements is the creation of an advanced virtual assistant capable of interacting with cheesemakers to optimize their daily work.
During the event, Professor Francisco José Casares from the University of Córdoba underlined the importance of digital transformation in the cheese sector as a driver of efficiency, flexibility and productivity. He explained that, thanks to the joint efforts of various entities, it has been possible to develop an innovative control and monitoring system that includes a voice-activated virtual assistant, similar to Alexa. In addition, the emphasis on data privacy was highlighted, guaranteeing a secure environment through a container-based architecture.
The ARISTEO initiative reflects how collaboration between institutions and the application of new technologies can boost professionalization and innovation in the agri-food industry. This type of project not only improves the competitiveness of local producers, but also strengthens sustainability and job creation in the sector, consolidating a more efficient business model prepared for the challenges of the future.
