Description
The project aims to replace chlorinated compounds in the sanitization of raw materials with nanoemulsified natural antimicrobials. Relevant pathogens are identified, active compounds are developed, and safe treatments are optimized to guarantee food safety without negative health impacts.
Results
A sanitizing process for plant-based raw materials using nanoemulsions of active natural compounds, with a decontaminating effect similar to that of sodium hypochlorite. This combined heat treatment with nanoemulsified natural antimicrobials has synergistic effects, allowing for a drastic reduction in the intensity of applied heat treatments.
