Description
The project establishes strategies to control pathogens in the processing of plant products, through microbiological characterization, use of nanoemulsified natural antimicrobials and risk assessment.
Results
Microbiological characterization of a processing line for gently processed vegetable products. Establishment of the conditions that allow for the sanitization of vegetables based on the use of nanoemulsions of active natural compounds. Determination of the impact of the type of preservation treatment applied and the storage temperatures on the shelf life of vegetable juices and refrigerated vegetables. Software that facilitates the implementation of Monte Carlo models for the quantitative assessment of microbiological risks: biorisk.
