Description
Based on an existing formula for a textured plate and carbonated beverage, work is underway to improve and adapt it to ensure an adequate shelf life and functional use. The project is progressing in terms of packaging and product usability, with the aim of facilitating its market launch and improving the quality of life for people with swallowing difficulties.
Results
Textured meat product: Development of chicken with a safe texture, realistic appearance, resistance to preservation treatments, and a complete nutritional profile, maintaining sensory acceptability in a ready-to-eat final format. Scalable process in relevant industrial environments. Adapted carbonated beverages: Pioneering formulation that preserves effervescence with a safe texture, enhancing the consumer experience, in a ready-to-eat final format.
